So, how do you make these healthy peanut butter and jelly cookies?

  • Preheat oven and prepare baking sheet.

  • Make the cookie dough: In a medium bowl, mix together the almond flour, maple syrup, vanilla extract, melted coconut oil, and a pinch of salt until a dough forms. Stir until all the ingredients are well combined.

  • Shape and bake the cookies: Shape the dough into five equal-sized balls and place them on the prepared baking sheet, leaving about 1 inch of space between each ball. Flatten the balls into discs using your fingers or the back of a spoon. Bake the cookies in the preheated oven for about 10 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool completely on the baking sheet.

  • Add jelly to the cookies: Once the cookies are fully cooled, spread an even layer of jelly on top of each cookie using a spoon or a knife. You can use your favorite vegan jelly or jam for this step, such as grape or strawberry.

  • Add peanut butter to the cookies: In a small bowl, mix together the creamy peanut butter with maple syrup and melted coconut oil (if using) until well combined. Alternatively, you can use plain peanut butter without adding any additional ingredients. Spread an even layer of peanut butter on top of the jelly layer.

  • Melt and add chocolate: In a microwave-safe bowl, combine the dairy-free chocolate chips and coconut oil. Microwave the bowl in 15-second intervals, stirring after each interval, until the chocolate is fully melted and smooth. Be careful not to overheat the chocolate. Once melted, spread an even layer of the chocolate on top of the peanut butter layer.

  • Freeze and enjoy: Place the cookies in the freezer for about 1 hour to allow the chocolate to set. Once the chocolate is firm, you can remove the cookies from the freezer and enjoy these delicious vegan peanut butter and jelly cookies! Store any leftovers in an airtight container in the refrigerator for up to 5 days.
